GF Pho with leftover chops

Want a fast, easy mid-week meal to incorporate a couple of leftover chops?  We are huge fans of Pho, and with some GF stock, millet and brown rice noodles, lemongrass and the mirepoix of the East, (ginger, garlic and green onion) this too can be yours fairly quickly.
Add some chilis, chopped cilantro and squeezed lime and the world is yours!
